Made in La Mancha region of Spain from the milk of sheep of the Manchega breed. It has a firm and compact consistency and a buttery yet slightly crumbly texture. Flavour is sharp with a sweet lingering taste.
Inedible rind.
Great paired with olives, sun-dried tomatoes and crusty bread or even honey and almonds. Also ideal for grilling.
